Kebabs
Ingredients
For the kebab:
1 lb boneless skinless chicken breast (beef or lamb)
2 tbsp lemon juice (from about half a lemon)
2 tbsp red wine vinegar
2 tbsp extra virgin olive oil
½ tsp garlic powder (or 3 cloves minced garlic)
1 tsp dijon mustard
½ tsp dried oregano
1/2 tsp salt
Freshly ground black pepper
Skewers
Veggies: (pick what you want to use)
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 red onion
1 Zucchini
Mushrooms
Instructions
1. Cut chicken into cubes, about 1 1/2 inches long, then place them in a large bowl. Add olive oil, lemon juice, red wine vinegar, dijon mustard, garlic powder, oregano, salt and pepper. Mix chicken together and let marinate in refrigerator for 15-30 minutes.
2. While chicken is marinating, cut red bell pepper, green bell pepper, yellow bell pepper and red onion into 2×2 inch pieces (to be skewered).
3. Preheat grill to medium-high heat. Or preheat oven to 375 degrees.
4. Place peppers, onions and chicken pieces onto a skewer, leaving a small space in between each ingredient and alternating ingredients as desired. You should be able to get about 8 skewers total.
5. Grill skewers for 8-10 minutes on each side, or until meat is cooked through and vegetables are tender. Or bake skewers at 350 degrees for 12 minutes, then broil 5 minutes at 500 degrees.
6. Coat any extra vegetables with marinade and grill or bake as above.
7. Serve kabobs with tzatziki sauce and whatever else you’d like. (Potatoes, rice, quinoa are all great options). Serves 4, 2 kabobs each.
Tzatziki
Ingredients
1 cup Greek-style plain yogurt
1 medium (12-ounce) cucumber, peeled, seeded, and chopped into 1/4-inch pieces
1 garlic clove, finely grated
2 tbsp freshly squeezed lemon juice
2 tbsp chopped fresh dill, plus extra for garnish
1/2 tsp kosher salt, or to taste
1/4 tsp freshly ground black pepper, or to taste
Instructions:
Stir together the yogurt, cucumber, garlic, lemon juice, and dill in a medium bowl. Season with salt and pepper. Taste and adjust the seasonings. Best made 2 or more hours in advance so flavors meld.

Greek Salad
This delicious Mediterranean based salad is perfect as a light lunch or dinner or as a lovely addition to a meat based meal.
Salad Ingredients:
1 English cucumber, cut lengthwise, seeded, and sliced ½-inch thick
1 green bell pepper, chopped into 1-inch pieces
1 red bell pepper, chopped into 1-inch pieces
3–4 Roma tomatoes halved and cut into ½ inch slices
5 oz sheep’s milk feta cheese, cut into ½ inch cubes
(You can use cow milk feta, but I find sheep milk has a richer flavor.)
⅓ cup thinly sliced red onion
⅓ cup sliced pepperoncini
½ cup pitted Kalamata olives
Dressing:
¼ cup extra-virgin olive oil
3 tbsp red wine vinegar
1 garlic clove, minced
½ tsp dried oregano, more for sprinkling
¼ tsp Dijon mustard
¼ tsp sea salt
Freshly ground black pepper
Instructions:
1. Thoroughly mix all the dressing ingredients
2. Combine all the salad ingredients and toss with dressing
3. Serve and enjoy!

Greek Yogurt Dessert
Ingredients
10 oz plain Greek yogurt
4 tsp sugar-free maple syrup (look for one that does not use artificial sweetener such as Sorbitol)
4 tsp sugar-free dark chocolate chips or (shaved)
2 tbsp chopped pecans
Instructions
1. Put yogurt into two dessert dishes and drizzle with desired amount of sugar-free maple syrup.
2. Sprinkle with a few tsp of shaved dark chocolate and chopped pecans and serve!
